Candied Almonds

Candied almonds taste absolutely delicious and this recipe is easy and straightforward. They are not just a wonderful Christmas snack, but also taste great as a crunchy topping on a festive red cabbage salad or on your morning chia porridge.

Ingredients

Almonds 200 g Whole, unblanched almonds work best.
Sugar 125 g
Water 75 ml About 75 ml.

Preparation

Step 1

Add almonds, sugar, and water to a pan and heat over high heat, stirring constantly until the mixture becomes a liquid caramel. Continue stirring the caramel until the sugar crystallizes and becomes white and dry.

Step 2

Continue heating the almonds while stirring until the outer layer of sugar caramelizes lightly (and looks like the recipe photo). You may reduce to medium heat if needed.

Step 3

If you want the almonds completely shiny and clear, continue heating while stirring until the sugar is brown and liquid and the almonds are glossy.

Step 4

Spread the almonds out on a piece of parchment paper and let them cool.

Step 5

Break the cooled almonds apart and serve them as a festive Christmas snack.

Candied almonds can be stored in an airtight container at room temperature for up to 2 weeks.
